Beetroot Chocolate Cake for a Healthy Valentine

2 cups White Whole Wheat pastry flour
250 g (approximately 2-3 beets) cooked and pureed
1 cup olive oil
2 Eggs
2 cups Sugar
6 tbsp. Unsweetened Cocoa powder
1 ½ tsp Baking soda
1 tsp Vanilla essence
¼ tsp salt

• Preheat the oven to 350 degrees, grease a baking pan
• Mix all the wet ingredients together in a mixing bowl and whisk with an electric hand mixer
• Add flour, baking soda, cocoa powder, sugar, salt and beat well together; pour the prepared mixture and bake till done
