Caprese Chicken


  • 6 boneless, skinless chicken breasts
  • Olive oil
  • 1 container grape or cherry tomatoes                                                                     Caprese Chicken
  • Fresh mozzarella cheese
  • 1 bunch fresh basil
  • 4 garlic cloves, chopped
  • Salt and pepper or garlic salt, to taste
  • Balsamic vinegar


Preheat oven broiler.

In a large sauté pan, heat a tablespoon or so of oil.  Season chicken with salt and pepper, or garlic salt.  Cook chicken over medium-high heat until cooked through, turning at least once to lightly brown both sides.

While chicken is cooking, heat 1 tablespoon of oil in another pan.  Cook garlic for 2-3 minutes.  Add tomatoes and cook for 2-3 minutes.  Add basil, stir, and remove from heat.

Place cooked chicken in a greased baking dish, top with sliced fresh mozzarella and tomato mixture.    Place under broiler just until cheese is bubbly and starts to brown.

Sprinkle with balsamic vinegar to taste.

Serve 4-6
