- White chicken breast
- Black beans
- 1.5 cups frozen white and yellow corn
- 4 tablespoons low-fat yogurt
- 1 tablespoon canola oil
- 2 tablespoons lime juice (freshly squeezed)
- 2 tablespoons chipotle taco seasoning
- 4 tablespoons fresh cilantro (chopped)
- 2 tablespoons fresh chives (chopped)
1. Combine chicken, black beans and corn in a large bowl; toss until well mixed.
2. Add sour cream, canola oil, lime juice, taco seasoning, cilantro and chives. Mix well.
