Mixed Vegetable Soup IV

1 tsp. Olive oil

½ onion chopped

1 clove garlic minced

2 cup Organic Vegetable broth

2 cup Organic Kale (ribs removed and chopped)

Optional seasonings (dried parsley, dried dill, lemon zest, dried thyme and dried marjoram)

Heat oil over medium heat. Add onion, garlic and cook until tender. Add 1 cup broth, seasonings and kale

to pan and cover. Cook until Kale is wilted. Add the baked potato and the remaining broth. Cool and blend

Simmer and serve warm.
